MOMMA & ME: STRAWBERRY BANANA BOWL
New recipe from my Momma & Me Smoothie Bowl series! Most kids love the flavor combo of strawberries and banana, and the antioxidants and potassium offer healthy energy. This is a great meal replacement bowl- very simple to whip up in the blender if you need a quick meal and don't have time to cook, or if you're looking for a refreshing nutrient boost to recover after eating something less than ideal or too heavy perhaps the day before. We love to have smoothie bowls for breakfast. In this single bowl, you'll treat yourself and your kiddo to a wide variety of nutrients. Zucchini piles on the potassium- (you might be surprised to learn a single medium zucchini contains 512 mg potassium- more than a medium banana that averages 422mg!). Zucchini also offers antioxidants, particularly vitamin C, which we usually associate with oranges and other citrus fruits. I often incorporate zucchini in place of bananas or in addition to them in smoothies because they have a mild flavor, and they're low calorie but nutrient dense. They work with nearly any flavor combo you have in mind!
Almond butter and chia seeds provide omega 6 and omega 3 fatty acids plus solid plant protein, while cinnamon is a great boost to the immune system. You can include any kind of leafy green in this bowl (spinach, kale, chard, etc), and the sweetness of the banana and strawberry will bury the bitter notes. My pick is dandelion greens, one of the most bitter and powerful greens available, a treasure trove of vitamins! Dandelion greens provide 1.5 times as much vitamin A, 4 times as much calcium, and 7.5 times as much vitamin K as broccoli. Dandelion greens also contain twice as much iron and three times as much riboflavin as spinach, plus a healthy dose of vitamin E as well.
Make your smoothie bowl thick like ice cream and let your kid have fun decorating with the toppings! Enjoy!
MOMMA & ME: Strawberry Banana Bowl
(serves 1 adult + 1 child)
2 frozen bananas
1 1/2 cups frozen strawberries
2 Tbsp almond butter
1/2 tsp vanilla
1/2 tsp cinnamon
5-8 dandelion leaves
1 Tbsp chia seeds
1/2 raw zucchini
enough water to blend (you can always add water as needed, but you cannot remove it! Go easy at first adding a little water at a time so you can achieve a nice thick consistency)
1 Tbsp hemp seeds
