HEALTHY CANDY APPLES

Looking for an autumn TREAT but finding it TRICKY to avoid sugar and allergens?  I've got you covered with this easy candy apple recipe.  Delicious and beautiful, these are packed with nutrients and fun to make with little helpers.  Happy Halloween!

Healthy Candy Apples

(makes approximately 12 apples)

 

12 small apples

12 popsicle sticks

 

Caramel Sauce:

1 1/2 cup pitted medjool dates
1 Tbsp coconut oil
2 Tbsp almond butter
pinch of Himalayan Sea Salt
1 cup nut milk

 

Chocolate drizzle:

add 1 Tbsp cocoa powder to left over caramel sauce

 

Toppings:

chopped nuts

coconut flakes

cacao nibs

12 small apples

12 popsicle sticks

 

Combine all of the caramel sauce ingredients into a high speed blender.  Pulse, then blend until fully combined and perfectly smooth. Push popsicle sticks into the bottom of each apple.  Use a spatula to transfer the caramel into a bowl.  If you'd like to create a chocolate sauce for drizzling, save a small amount of the caramel into a second bowl and stir in 1 Tbsp of cocoa powder with a spoon.  Put each topping of your choice in separate bowls.  Hold the popsicle stick like a handle, and turn the apple in the caramel to coat.  Immediately and gently turn the caramel coated apple in a bowl of chopped nuts, coconut flakes, or whatever topping you like.  Finally, use spoon to drizzle the chocolate sauce (optional).  Allow caramel to harden in the refrigerator for at least 1 hour before serving.  Candy apples keep in refrigerator for 2 days. Enjoy!
