LETTUCE WRAP SNACK

Whether you're craving sweet or savory, I've got you covered with these 2 simple lettuce wrap recipes- one with banana, and the other with avocado.  Any large leafy green can work to hold your filling, so pick your favorite, or switch it up- collard greens, swiss chard, kale...  My favorite for wraps is romaine because of it's crunchy yet watery texture, and the mild flavor pairs well with any filling.  Here are my two favorite go-to snacks wraps that my toddler loves as much as I do.  Pick whichever suits your mood- one sweet, one savory.

Sweet Lettuce Wrap
serves 1 (2 wraps)


2 Romaine lettuce leaves
2-3 Tbsp almond butter
1/2 ripe banana
drizzle of honey (optional)

Rinse the romaine leaves with cool water then pat them dry with a paper towel.  Cut the very bottom 1/4 inch off of the leaf and discard.  Spread half the almond butter on one leaf, and the rest on the other.  Cut half a banana down the middle lengthwise, and place onto the almond butter along the stem (center) of each leaf near the top.  Add a drizzle of honey (optional).  Bend the stem at the middle and fold the leaves in half to cover the banana.  Wrap the right and left sides of each leaf into the middle, then flip the wraps over and set on a plate so they will hold together.  Or don't set it down or even bother with a plate- just devour that gooey wrap as quickly as you made it!

Avocado Lettuce Wrap
serves 1 (2 wraps)


2 Romaine lettuce leaves
1 ripe avocado
juice of 1 lemon
1/4 tsp red pepper chili flakes
pinch of sea salt


Rinse the avocado and lemon in cold water to remove any dirt.  Cut the avocado in half lengthwise, remove and discard the pit.  Scoop out the avocado flesh into a bowl.  Add the remaining ingredients and mash with a fork until combined and set aside.  Rinse the romaine leaves with cool water then pat them dry with a paper towel.  Cut the very bottom 1/4 inch off of the leaves and discard.  Scoop half of the avocado filling into one leaf, and the rest onto the other leaf.  Bend the stem at the middle and fold the leaves in half to cover the filling.  Wrap the right and left sides of each leaf into the middle, then flip the wraps over and set on a plate so they will hold together.  Nom nom nom... Enjoy!
