CINNAMON PECAN PROTEIN BALLS

My Vitamix broke!!!  Have no fear friends- I'm wrapping it up to ship today, and it will be repaired or replaced soon enough thanks to the warranty.  Breathe.  All will be fine, because of two words: FOOD PROCESSOR.  While I wait for my precious blender to return, I'll stay fully stocked with these filling Cinnamon Pecan Protein Balls- little balls of no bake energy perfect for on the go! Enjoy!

When dough is crumbly, but will stick together if pinched between fingers, it's perfect and ready to make into balls.

CINNAMON PECAN PROTEIN BALLS

2 cups raw unsalted pecans

1 cup raw unsalted hazelnuts

1 cup pitted medjool dates

3 Tbsp chia seeds

1/4 cup hemp seeds

1/2 cup unsweetened coconut flakes

1 Tbsp vanilla extract (no alcohol)

1 Tbsp cinnamon

1/4 cup raw unsalted almond butter

1 Tbsp unrefined virgin coconut oil

1 Tbsp filtered water

generous pinch of sea salt

 

Pulse the pecans and hazelnuts in the food processor until they are finely chopped, but not too small.  Add the remaining ingredients and process all together for roughly 2-3 minutes using the 'DOUGH' setting.  Stop when the mixture is able to stick together when pinched between your fingers.  Do not over process.  Once you've created the dough, use clean hands to form small balls.  Store the ones that you didn't scarf down immediately in the freezer for up to 3 weeks.  Eat cold, straight from the fridge or freezer.  YUM
