CHOCOLATE PUMPKIN PIE SMOOTHIE


HAPPY HALLOWEEN friends!  Get festive with this un-BOO-lievable creamy smoothie stack!  I've been making this pumpkin pie smoothie recipe every fall for a few years, but this October I tried something new- CHOCOLATE.  If you haven't had pumpkin and chocolate together, you're in for a true HALLOWEEN TREAT!  Despite the decadent taste, pumpkin is low calorie, high in Vitamin A and a great source of fiber.  A hint of tahini, chia seeds and pecans add a host of nutrients to this recipe that include protein, omega 3's, thiamin, copper and manganese. This combo is so good it's SCARY!  Super rich and filling, this is a true dessert, but one that leaves you full of energy.  As always, I look to whole foods for sweetening, and I've included bananas and a handful of dates to do the TRICK!

Chocolate Pumpkin Pie Smoothie

(serves 2)

2 frozen bananas
1 cup organic pumpkin puree
1/4 cup raw pecans
1 tsp chia seeds
1 tsp vanilla extract (non-alcohol)
1/2 tsp pumpkin pie spice
3 pitted medjool dates
handful of ice

Place the ingredients above in your high speed blender and blend until you’ve reached a thick smoothie consistency.  Pour 1/2 of the mixture into your glass as a bottom layer.  Use the remaining mixture in the blender as a base for the chocolate layer.

Chocolate layer (top):

Add the following to the remaining base mixture:

1 pitted medjool date
1 Tbsp black tahini (*tahini that is not black will taste the same, but your chocolate layer will not be as dark)
4 tsp raw cacao powder (or cocoa powder if you prefer)

Blend the chocolate layer until you’ve reached a thick smoothie consistency.  Slowly pour the chocolate smoothie on top of the bottom layer already in your cup.  Add a cinnamon stick for garnish and enjoy!

tip:

You can always add liquid as needed, but you cannot remove it!  Go easy at first adding a little water at a time so you can achieve a thick enough smoothie to layer easily.  If you're smoothie turns out too runny, put it in the freezer for a few minutes to set before pouring the top layer so the colors won't mix.
