SATISFY YOUR ICE CREAM CRAVING WITH THIS HEALTHY CHOCOLATE NICE CREAM
Nice Cream is an amazingly simple and healthy way to whip up the creamy consistency of ice cream but without the artificial flavorings, preservatives, processed sugars and dairy overload. The basis for any flavor of nice cream is blended frozen bananas. I buy at least 2 bunches of bananas without fail at every grocery trip whether we have some on the counter at home already or not. I'm always overstocked because I have no patience to wait around for those green ones to ripen! At anytime I'm sure to have some bananas on hand that are ripe enough to peel and eat whole, use in muffin batter, or freeze for nice cream. The more spots bananas have, the sweeter the taste. I have a constant cycle of ripening, peeling, breaking into chunks, then wrapping in saran wrap individual bananas to throw in the freezer so I never have an empty freezer emergency! When I get a chocolate craving, this easy recipe is my go to fix. You're gonna love the taste and the nutrition benefits too. Potassium from the bananas, dates packed with fiber, antioxidants in the cocoa, and healthy fat from the optional avocado. Triple the recipe and store some extra nice cream in the freezer for later- just remember to allow 30 min or so to thaw in the fridge when you get a craving!
For soy allergic people, chocolate is tricky. Chocolate chips, chocolate bars, and chocolate candy typically require a binder and preservative to keep the ingredients in tact for a decent shelf life. The most common binder in any commercially sold chocolate candy is soy lecithin, which is not particularly healthy for anyone, but it could send me to the hospital due to my severe allergy. Because chocolate is bitter by itself, commercial chocolate candy always includes a hefty amount of processed (usually refined) sugar. Good quality raw cacao powder and organic cocoa powders can be found easily at the grocery so you can whip up your own chocolate nice cream, skip the soy lecithin, and use the natural sugar from healthy bananas and dates to sweeten.
Chocolate Nice Cream
2 frozen bananas
1/2 cup almond milk or coconut milk
1Tbsp organic cocoa powder
1 tsp vanilla extract
2 pitted medjool dates
1 Tbsp avocado (optional)
chopped brazil nuts
Place ingredients in a high speed blender and blend until you've reached a thick creamy ice cream consistency. Depending on what type of blender you have, you may need to start by using the pulse button, and stop a few times to scrape down the sides with a spatula to break up any air pockets that form and keep the mixture churning. Both the Blendtec and Vitamix brand blenders do great without creating a need to stop the machine- these models have an "ice cream" program that blends at the perfect speed and right duration. Do not over process, or you'll have to live with a delicious chocolate smoothie! You can always freeze your concoction for a few minutes to let it thicken up again if need be.
