PALEO PEACH CRUMBLE
It's peach season! This sweet dessert recipe is so unbelievable simple, quick, healthy and delicious, I'm super excited to share it with you! For some time I've experimented with various versions of a traditional baked apple crisp thanks to inspiration and help from my mom, who is a phenomenal baker and creator of heavenly desserts of all kinds. After making variations with honey crisp apples, chopped dates and rolled oats, I eventually realized I could make a paleo concoction that is naturally sweet and crumbly, with all of the warm gooey and crunchy texture, sweet and sugary flavor I desired but without the dates or ANY sweetener, and even without oats for anyone looking to avoid grains. This recipe offers a wealth of nutrients, taking fiber from the unpeeled peaches, protein and omega 3 fats from hemp seeds, and a boost of antioxidants from cinnamon. The pecans alone, provide great fiber and antioxidants too, plus vitamins A, B, E, folic acid, and zinc. Whip this up in small ramekin bowls for individual servings, or make a large dessert by doubling the recipe in a family size dish to serve family style. Enjoy!
PALEO PEACH CRUMBLE
2 fresh peaches (with peel on)
1 Tbsp hemp hearts (hemp seeds)
1/2 cup crumbled raw unsalted pecans
2 Tbsp unrefined virgin coconut oil
2 tsp vanilla extract (no alcohol)
1 tsp cinnamon
pinch of sea salt
Preheat oven to 375 degrees F. Rinse the peaches to remove any dirty, then chop into small chunks and place in one prep bowl, set aside. In another small prep bowl, use a spoon to mix together the coconut oil, vanilla, cinnamon and sea salt. Once combined, stir the vanilla cinnamon oil into the bowl of peaches, coating them thoroughly. Spoon the mixture into two small ramekins, dividing equally. Roughly chop the pecans and crumble them on top of each bowl of peaches. Bake for 15-20 minutes. After removing fro the oven, sprinkle raw hemp seeds on top of each. YUMMMMMM!
