RAW VEGAN SPECIAL SAUCE

This savory concoction is a mainstay in my kitchen.  I keep a large container of this creamy goodness in the fridge at all times and call upon it for all kinds of occasions- it makes the perfect cold dip for raw veggies, it's an excellent sauce over turkey meatballs or chicken, and it's a fabulous and healthy trick to making any soup recipe creamy as opposed to using dairy products like yogurt or heavy cream.  With only 4 ingredients, this recipe is miraculously easy and fast to make, and it keeps in the fridge for 5-6 days.  Make a big batch and try it out however you like!

RAW VEGAN SPECIAL SAUCE

2 cups raw unsalted whole cashews or cashew pieces

juice of 1 large lemon

1 cup filtered water

2 tsp dill (fresh or dried)

Blend all ingredients in a high speed blender until fully combined, perfectly smooth and creamy like the consistency of mayonnaise.  Add additional water 1 Tbsp at a time if necessary to facilitate blending.  Use immediately, or cold from the refrigerator.  The texture will be similar to mayonnaise when served immediately, and thicker like hummus when served from the refrigerator.  Keeps in the refrigerator for 5-6 days.

tips: The more water you add to the recipe, the more 'sauce' like consistency you'll achieve.  With less water you'll achieve a thicker veggie spread.  Both ways are wonderful, and you can tailor the recipe to your hearts desires.  Enjoy!
