CHEWY CHOCOLATE ALMOND COOKIES

All month I've been sharing my favorite Valentine's sweets with you... a Faux Peanut Butter Chocolate ShakeBlack Coconut Truffles, Coconut Pecan Cookies, and last but not least... I'm happy to share some chewy chocolate heart shaped goodness!

 

These cookies are really yummy, and filled with healthy fat, so I recommend making them petite. You may notice in the photos that mine got a bit BIG somewhat accidentally... I gotta confess that when I was halfway into making these I realized the only cookie cutter in my kitchen is a pumpkin... I had to wing some old fashioned freestyle heart cutting with a butter knife.  They turned out relatively symmetrical and passable as hearts, but I definitely recommend checking to be sure you have a heart shaped cookie cutter in your kitchen to save some time :)

CHEWY CHOCOLATE ALMOND COOKIES

 

Cookies

2 cups raw unsalted almonds

8 pitted medjool dates

1/4 cup coconut butter

2 Tbsp flax seed

2 Tbsp filtered water

1/2 tsp almond extract

2 tsp vanilla extract

2 tsp lemon juice

1/8 tsp sea salt

 

Chocolate Icing

4 pitted medjool dates

3 Tbsp cocoa powder

1/4 cup coconut oil

1/3 cup filtered water

 

Preheat oven to 350 degrees.  Pulse the almonds alone in a food processor for 1-3 minutes to create a fine texture, although not as fine as flour.  Add the remaining cookie ingredients and process for 1-2 minutes until you've created a dough that sticks together when pinched between fingers.  Form the dough into a ball on a piece of parchment paper and use a rolling pin or clean hands to flatten into a thin large shape.  Use a cookie cutter to cut the dough into individual heart shaped cookies.  Bake on a parchment paper lined cookie sheet for 12-15 minutes.  While letting the cookies cool, make the icing in the food processor.  Process all icing ingredients for 2-4 minutes until you've achieved a smooth texture.  Add an additional tsp or two of filtered water if necessary to facilitate blending.  Ice cooled cookies, then enjoy!  These store in the freezer for 3-4 weeks.
