GINGER PECAN SMOOTHIE
This smoothie has it all. Fruit!, Leafy greens!, Veggies!, Nuts!, and even Grains and Dairy- oh my! It’s a pretty hefty smoothie that packs enough calories, fat, protein and varied nutrients to serve as a quick meal replacement. It’s super filling but will leave you with tons of energy and feeling light. Ginger is the dominant flavor- so if you prefer a less spicy taste use just 1/4 tsp, or a smaller chunk of the fresh root. Omit the yogurt for a dairy free rendition, and substitute 1 Tbsp chia seeds for protein.
Ginger Pecan Smoothie
3 frozen bananas
1/4 cup rolled oats
1/4 cup greek yogurt (use organic, plain, non fat)
1/4 cup zucchini roughly chopped into chunks
1 medjool pitted date
1 cup spinach
1/4 cup raw pecans
1/4 inch chunk of fresh peeled ginger, or 1/2 tsp ground ginger
1/2 tsp nutmeg
Blend all of the ingredients in a high speed blender until you’ve achieved a smooth consistency. Pour in a glass and enjoy!
