MOMMA & ME: GREEN MACNUT BOWL


When making smoothie bowls, my toddler loves to help- she measures or counts and drops ingredients into the blender, peels fresh banana and uses a butter knife to cut the fruit into chunks on a small cutting board, and has tons of fun artfully decorating her bowl with toppings.   From my Momma & Me Bowls series, this recipe has fruit, nuts, greens, and hydrating coconut water to make for a nutritious and energizing snack for you and your little one to share.  While I love the crunch of the macadamia nut topping, my two year old still doesn't have all of her molars in yet, making whole nuts and even chopped nuts a choking hazard.  She eats this bowl without the nuts on top, but here she still benefits from the vitamins, minerals, antioxidants and healthy fats in the macadamia nuts that are blended into the smoothie itself.  Smoothies in general have allowed her to enjoy the flavor and nutrients of a great variety of nuts in blended form from as young as six months old.

MOMMA & ME: Green Mac Nut Bowl

(serves 1 adult + 1 child)

smoothie:
2 frozen bananas
1 cup frozen mango
4-5 lacinato kale leaves
1/4 cup macadamia nuts
1/4 chunk peeled fresh ginger root (or 1/2 tsp ginger powder)
2 pitted medjool dates
1 cup coconut water (add more coconut water as needed to facilitate blending, but only add a little at a time so you can maintain a thick smoothie consistency)

Blend all of the ingredients above until you’ve achieved a thick smoothie consistency.  Pour into a bowl and add toppings.

toppings:
sliced banana
chopped mac nuts
unsweetened coconut flakes

If you’re craving chocolate, add some cacao nibs, which also pair well as an additional crunchy topping!
